Monday, July 18, 2022 - Opened and decanted last night hoping to enjoy it with an amazing grade 5 Japanese wagyu sirloin steak. What a disappointment, totally acidic and not much else. Out of curiosity I decided to pour it back into the bottle and give it 24 hours time. Well, lo and behold, tonight another bottle emerged. Quite full bodied, it had shed almost all the acidic part and in its place a good taste of red fruit emerged. Really enjoyed it with some Stilton cheese. What a great surprise!

    3/11/2024 1:14:00 AM - I'm sure there are a large number of great wines poured down the sink because their "owners" hadn't the patience to air them properly. It's almost like magic when a thin and acidic juice slowly metamorphoses into a real wine.
