Thursday, October 27, 2022 - Organic Gamay on limestone, clay soils. It is made by the méthode ancestrale: hand-harvested, destemmed and fermented in vat until it reaches around 6% alcohol. It is then lightly filtered and bottled and finishes fermenting with indigenous yeasts in the bottle. Some yeasty notes, fruity and slightly sweet. It has the fruity side of Beaujolais with some fizz. It's kinda it's own thing, so it's hard for me to rate this.
