Sunday, March 11, 2012 - Decanted 3 hours prior to consumption. Tasted after 1.5 hours in the decanter, there was minimal fruit and the finish was still tight with a tannic grip. With the extra 1.5 hours of air, the fruit emerged, nuances appeared, and the tannins melted into a long finish. Ahh, the power of cool climate Pinot, biodynamically farmed and spontaneously fermented!
