Sunday, October 17, 2021 - Decant for barely 30 minutes and then drink with home made spaghetti and meatballs. Why Saxum with Italian food? Because we are reorganizing the cellar and I have too much Saxum to fit in the Saxum section so we needed to drink this.

Still primary flavors but losing some of the roughness of youth. Excellent balance. The nose reminded me of violets with perhaps a tiny whiff of VA that disappeared so fast it might have been an illusion. I thought the predominant flavor was smooth raspberry up front while my wife thought syrah pepper spice at the back. We were both right. A bit of plum or other red fruit to add to the raspberry and some other spices to go with the pepper. The alcohol was barely noticeable. Very smooth. Bravo, and no, it is not falling apart. NO risk of that. I have 2 more. Space them out over the next 8 years.
