Community Tasting Note

Thursday, November 5, 2020 - Opened yesterday, kept under the open cork overnight and using the last few ounces remaining for my note. The color remains intact, fairly clear without any signs of browning or oxidation. I poured this blind for the group and several comments suggested pineapple and tropical fruit. That's an interesting call-out, as I've had a 1/2 dozen bottles of this and I've not noticed that flavor profile in any of my previous notes. I do get some of that based on the suggestion but I still see this as more of a apple-based, citrus type of Chard. However, some of that is softening with age and the raciness that I mentioned several times in the past, this quality has begun to soften. The wine is beginning to round out the edges, retaining some spiciness of the lime skin with mint, but it's starting to smooth out. There is even a shade of old wood that is showing through, too. My guess is that the wine is transitioning now to an aged phase, crossing from youth as it evolves. Drinks fine now but I would not wait a lot longer unless you liked aged quality in your Chard.
