In fact, I believe that the 96 Salon is finally starting to enter the early stages of its drinking window as this bottle showed some nice depth with less youthful tightness than in the past. The thing that struck me the most about this bottle was the level of precision - which was off the charts. After about an hour of being open the flavors kept expanding and showed deep citrus, lime, nuts, honey, cookie dough, flint, strong minerality, and a wonderful level of acidity. The finish went on for well over one minute. This was a real treat and has to be one of the top 2-3 bottles of champagne I have had this year. I expect this to continue improving in the future, but it is certainly no sin to open one of these today the way it is drinking. A special experience that is highly recommended.
