Saturday, September 29, 2007 - A bubbly elixr. Stunning concentration and finish tells you this is something special. Yeasty green apple, belgian white beer. Then comes an astounding chalky, steely minerality. Laser like acidity keeps everything in perfect balance. I'm not terribly experienced with Champagne, but this certainly seemed a bit tight and I'm excited to see how my other bottles will progress and improve over the years.
