Tuesday, December 22, 2015 - Enjoyed at WaterBar in San Francisco with oysters and bass carpaccio.
Poured and let breathe a few minutes and the unmistakeable Salon crispness just blossoms. Tart, but very dry, with citrus notes. Incredible finish that reveals the true depth of this wine.

I'm saving the 100 pt. rating for the one bottle I have left that I'll open in a few more years. Simply the best champagne I've ever had.
