Thursday, December 29, 2016 - This is the Rolls Royce of Champagne. We could certainly taste the beauty of this vintage. Still young but within an acceptable window but this will only get better for some time. Wonderful notes of lemon, lime, the beautiful taste for crushed rock. Just a hint of a lovely yeast flovor on the palate and nose but not too much. The finish was incredible went on for a solid 45 seconds. Later on my second glas developed this great creamy texture and flavor. A truly wonderful wine experience!
