Saturday, December 31, 2016 - A zinging knife edge of acidity and salinity supports still tightly wound citrus and chalky flavors with just the beginnings of creaminess. With caviar the wine tastes like a wave of sea water. I will revisit this astounding champagne, clearly above my taste bud's pay grade, in a decade.
