This was, by far, the best bottle I have had up till today of the Salon – 96.
Previous bottles has been more unyielding and way grumpier, and so I guess this is now slowly starting to reveal some of it’s real true hidden colors?
Such a pure and yet deep and complex nose!
Like a fine Le Montrachet almost.
Loads of yellow fruit impressions, fine lemons and apples, smoky minerals, almonds, nuts, fresh bread, and loads of more impressions, almost making me dizzy.
This is still very primary, but yet extremely likable.
Green apples, ripe pears, creamy and chalky ripe citrus fruits; both lemons and grapefruits, in a mixture with more sour and citric citrus fruits.
Enormous length with such fine acidity and extremely clean
These bottle showed many layers, and kept improving until, way too fast, it was empty.
This is the essence of how pure Chardonnay with bubbles shall taste.
Just starting to burst out and open up from its long slumber, and will last and grow for decades to come from here.
