Friday, July 23, 2021 - A lost Friday afternoon gathering – Champagne and Burgundy (Blacksalt, Washington DC): Perfectly mature yet energetic nose displaying perfectly ripe yellow fruit, baked apple, a hint of orange peel, lemon curd, honey, caramel, white flower, white pepper, burnt sugar and crushed rocks. Excellent concentration, very finely layered ripe yellow fruit, rich yet pure and precise, perfect balance, fine generous mousse, bright acidity, strong mineral and a long perfectly ripe yellow fruit driven finish with honey and crème brulee at the end. This is a beautifully mature example that is drinking well. This is a perfectly mature yet fresh and energetic example. The 96 Salon seems to be entering the maturity.
