Monday, March 7, 2022 - Poor man's Dauvissat! The bottle showed slightly oxidised when popped, but as it breathed in the glass a lot of bees wax, oyster shell, and a bracing acidity came through. This really split the waters around the table, but those who dig the Dauvissat style were into it.

I have another two bottles, and I probably won't wait too long before drinking up, as I can't see it improving any further, although it's not on the decline either.
