Friday, March 8, 2024 - This needed about 3-4 hours of air to open up. It was incredibly acidic at first but that softened and left something really beautiful. Nose of really pure cherries with some rich floral notes. Palate was just a lovely rich dusty, earthy cherry with perfectly integrated tannins and really nice acidity. It was absolutely perfect with carbonara.
