Monday, May 14, 2018 - 71% Chardonnay, 29% Pinot Noir. Fine mousse, clearly Chardonnay on the palate. Crisp green apple tart like a Kouign-Amann. Went well with bleu cheese macaroni and creamy chicken salad (smoked chicken, pear, mayo). Best chilled slightly below room temp but not too cold. This would be amazing with Norman cuisine such as rabbit and pommes frites, Camembert, etc. Very well made. Santé!
