Wednesday, July 27, 2022 - A stunning sauv blanc (the restaurant didn't have the 16 I ordered, so kindly poured this instead). Pop and pour, with wonderful evolution, over the hour before it disappeared. On the nose: soft reductive notes, then very soft gooseberry with loads of nutty notes. Fantastic acidity and density with more gooseberry, nuts and herbs. Excellent length and paired perfectly with pesce crudo and an amartriciana of the sea.
