Wednesday, July 12, 2023 - Appearance of very pale straw. Nose of lemon oil, chalk, jasmine, green apple. Palate has such bright a refreshing acidity, so beautiful, dry, minimal EtOH. Green apple, bubble gum, white peach, little straw, notable salinity. So damn good, hard to believe it’s already got 8 years on it. Bought another bottle to let it go further and see what happens.
