Friday, August 26, 2016 - Pretty tight on initial pour. Drank half (went well with paella), and it opened up over the cause of a couple of hours. Re-corked, put it in the fridge and forgot it was there. Opened four days later, and found this had really hit its sweet spot. Drink now with plenty of air or hold for 5-10 years.
