Monday, May 27, 2019 - My third note on this beauty; I’ve only been drinking halves because the full bottles require a few more years, and there seems to be more variation. Five halves Ive had have been great. Tonight, there’s an aroma of Mexican cinnamon/chili chocolate, mint, and cocoa shortbread. Some iodine and blackberry as well. This is all about complex acidity, which is not always appreciated, if one’s taste runs toward fleshier wines. Like cranberries very lightly coated in carob and dark chocolate, not full bodied but long, and superb with food. I made crispy chorizo and onion bits over a coarse corn meal, dandelion green, and (rehydrated) dried morel polenta, using turkey broth and a knob of tangy goat butter. Yummy.
