Wednesday, August 7, 2019 - Day 1 Coravined
Day 2 Coravined
Day 3 popped

Day 3 notes: sweet cherry, leather, pencil, dense damp and smoky
Palate: savoury full bodied, sweet tannin, nice.

On Day 1 and 2, it was pleasant, but I could only say “it’s feels as though there is more to it.”
On Day 3, it is finally emerging and the rating is based on Day 3.

Very often with these nice aged Spanish wines, I feel the first few glasses so often does not do it justice. And Not until I’m nearly finished the bottle is when I truely enjoy the wine. I’ve tried using a vinturi aerator after coravin on my first pour, but it just doesn’t get the same results as Day3. If you know a way, do not hesitate to let me know!
