Tuesday, September 28, 2021 - Drank it over the course of three nights. First sip right out of the bottle was almost undrinkable. I got a strong whiff of gasoline so let it decant for about an hour. Tried it with food and it had opened up but I still did not want to drink a glass. Revisited after 24 hours and it had become lovely, almost floral with some menthol after taste. Poured some more on night three and it had gone past its prime. Very tannic and I could really taste the cab franc. I think it needs air and strong cheese. I plan to stay away from my other bottles for a while, but agree with the taster who said that time could take this either way. If you do drink leave time to decant.
