With that out of the way, this was brighter and lighter than many a less elegant PX. More nuanced too. That said, as much as I love sherry, I just can't get myself very excited about PX. It's the style, not this rendition. I'm all for pouring it on ice cream, but at that point the same can be said of a decent chocolate sauce or strawberry jam.
