Most barrels were put through secondary fermentation, while the remaining barrels weren't to preserve some of the crispness and minerality we wanted in the final wine. Several different yeast strains were used to promote complexity of flavors and the wine was aged on its lees to bring volume and texture to the wine. On the nose aromas of honeydew melon, green apples, vanilla, cream, and minerality are present. These aromas carry through to the rich, textured palate alongside flavors of honey and lemon. The wine is round and creamy, but also has enough acidity to remain crisp and refreshing There are enough oak derived characteristics to add complexity, but no so much as to overtake the wine." - Pearmund Cellars
