Monday, October 15, 2018 - This is a lovely cider, with a deep nose of fresh apple, pure and simple. Slight petillance, dry, with a very slightly, pleasantly bitter finish. The palate is light-bodied, simple and fresh, like the nose: just pure, crisp apple fruit, laid bare for all to see. Having grown up in St-Hilaire, Quebec, where the apple harvest is an autumnal rite, this cider brings me right back to childhood as surely and swiftly as the Proustian Madeleine.
