Monday, April 22, 2019 - Sad to see my last bottle, but it is nice to go out on top! Easily the best showing yet for me for an Ultramarine wine and I've been on board since the beginning. There's a tart green apple, tropical fruit, and stoney essence to this wine that is like a fine Chablis. Fresh, small bead, energetic and edgy in all the right spots. It shows fruit, but isn't overtly sweet, so nicely balanced with yeasty flavors and acidic spine. Really lingers on the palate. Would like to see how this would do served blind on a table alongside vintage Champagnes. Methinks it would fare well.
