We opened this last night and In recognized it took some air for the structure to develop, as it started off a bit soft initially. With the air, the chalky/mineral inflection increased. So, decided to bring home the last glass and keep it overnight, but using only a natural cork, it lost the CO2 overnight and is pretty well still today. Lightly bronzy/gold in the glass. Some toasty bruised green apple, pear, tangy lemon from the acidity, along with some slatey mineral in the finish. I actually like this better today, as a mostly still wine as it drinks like a cool, complex Chardonnay.
