Saturday, December 17, 2016 - Fascinating and totally unique nose giving up smoke, beeswax, and honeycomb. Incredibly savoury overall. Nose is quite expressive and gives up more with a good swirl. Very proper. On the palate this has a lot of ripe red and yellow apple flavor that turns into a more mature and honeyed midpalate but offers lots of texture and sufficient acidity through the finish. Savory throughout. Hazelnut and almond butter with a strong floral component as well. Coconut notes too. Sort of in a category of its own.
