Friday, June 19, 2009 - Very correct and pleasurable though a touch austere in structure. More minerally than any aged Sauternes I've ever had. Tasted some abour 14 hours later that had been left in a glass overnight and it was much more like one would expect, very elegant and caramelly, so perhaps decanting is in order for this wine. Before tasting that I would have judged that this wine was in decline but now I'm not so sure. Still great with foie gras with assortment of blue cheese, apple compote, and caramelized onions.
