Wednesday, July 1, 2020 - Bottle off the wine list at Table at 7. Drank in my own Grassl Cru glass.
Appearance is clear, pale intensity, ruby colour. Legs.
Nose is clean, medium+ intensity, with aromas of fragrant soil earth, stony minerality, ripe dark red cherries, red plum. Florals becoming more apparent with air. Developing.
On the palate, dry, high acidity, silky though well-structured medium+ tannins, medium+ body. Medium+ flavour intensity, with flavours of sweet ripe red cherries, cherry plum, rumbling stony minerality and savoury fresh earth. Long finish. Some underlying meatiness that is pulsating and dying to burst out but the elegant minerality is keeping it in check at the moment.
Very good quality. Enjoyable already sipping it slowly over the course of 2 hours. Good future ahead. Expressing the terroir of Boudots very well for me.
