Wednesday, March 29, 2023 - Drinking very well at the moment, and was surprisingly open from the pop and pour. It's still very lean, but the fruit has started to come around, and make itself present. There's some oak, but it's not fatty or buttery, but instead shapes this phony Chablis into a whole. There's such a refreshing, piercing acidity along with oyster shells, an explosion of citrus and just a touch of oak.

This would have been killer with a dozen oysters! I see no rush to drink this, but I also don't know if it will improve further.
