Monday, October 12, 2020 - Decanted for total of 3 hours and drank at 1st, 2nd, and 3rd hours. Closed yet fruity at hour 1 with good acidity and decent tannins. At hour 2 paired with grilled filet mignon. Still fruity and more open but lacking depth even with the steak pairing (it did go pretty well with the steak though). At hour 3 after dinner by iteself became quite hot. Hour 2 seemed to be the sweet spot and that's where I felt it peaked at 89. Not bad at this point in it's life but overall a bit disappointing given the price I paid. Should I have waited a few more years to open? I opened this today to see if it would wow me and motivate me to grab a few more for the cellar. It did not.

    10/13/2020 12:37:00 PM - I quite enjoyed reading your most thorough, very *systematic* TN! 2/3x when I've tasted this I felt it NEEDED cellaring into '23, though one would think your decanting regime might have accomplished much the same...
