Thursday, January 18, 2024 - At a restaurant in Dijon. Initially some soy-like features. These did dissipate somewhat after we poured this in a decanter, but not entirely. Minty accents surround a darker fruit of sour cherry. Mineral and meaty undertones. But also medicinal and a slightly chemical touch. The palate was one-dimensional, acidity that felt a bit too biting and slightly coarse tannin. This was said to be an off bottle.
