Friday, July 22, 2022 - Definitely one of the most interesting drinking experiences I've had. Because Y wasn't made every year in the past, getting to drink it is an opportunity to experience 'dry' Sauternes.

Medium gold. We left it in the bottle with the cork out but didn't decant. After 20-30 minutes in the glass there were wonderful aromas of honey, apricots and spice - reminding me of a classic Sauternes smell. The wine itself is of course dry, but on the palate it still showed strong bursts of acidity along with the aforementioned Sauternes profile. After approximately 1.5 hours after opening the bottle, the taste started to fade, but the wonderful aromas remained.

If you still have this in your cellar, I would drink it soon - and take the short drinking window into account (best between 30-65 minutes after uncorking and leaving in the bottle). A truly unique wine - I don't imagine there are many old Ygrecs left.
