Monday, April 15, 2019 - Very elegant and 100% varietally correct GSM. Notes of cherry and wood appear primarily on the finish. It is a fairly light wine (think in terms of a light Pinot, but Rhone-ish), not mouth-filling like an excellent Rhone GSM
and zero tannins.
I would have rated higher as I absolutely loved the depth and complexity, but it was a tad too light-bodied for a higher rating.
The recommendations online suggest pairing with red meat, but I don't believe it will stand up to those...we had it with 4 hour smoked whole beer-can chicken and that was a good pairing. Grilled salmon comes to mind as another good match. We let it breathe about 3 hours and it did not change over the course of dinner or the evening, so that's about right. DRINK NOW.
