Wednesday, March 8, 2017 - Upon decanting a little closed up with good balance, deep baking cherry nose with tobacco and cabernet. Still opaque with purple rim, some tannin.

Taste: pronounced cabernet with cherries, beef blood and something I can't identify-something savory but I can't put my finger on it. I don't think this will improve in bottle but it will keep far another five years.

Good with strip steak with glace' and buttermilk mashed potatos.

*Note: I decanted this some three hours ago and neither the nose nor the taste have changed to an extent worthy of note. I still cannot identify the "something" in the mouth. Not mushrooms, but something hinting at that. The tannins are more pronounced after three hours than they were at first blush indicating staying power for at least another 8-10 years. I can wait, can you?
