Wednesday, September 23, 2015 - Decanted 2+ hours prior to drinking. Paired with french rack of elk and Brussels sprout. Still some noticeable tannins - hard to believe but this feels like a young wine despite being 20 years old. Lush and textured. Notes of leather, spices, walnut, cassis. Patience is a virtue with this one. Can easily sleep a few more years before reaching its full potential.
