Tuesday, September 7, 2021 - Amazing, didn’t decant long enough. A lot of tannins and structure given the relatively young age. Need probably 2-3 hours

9/8/2021 6:32:00 PM - Day two. fantastic structure and complexity. But Rounder, and acid dropped off a bit. still big tannins. This is too young (obviously) but I think has great potential
