Friday, April 7, 2023 - A very enjoyable and focused bottle of Dauvissat Sechet 2017 that was showing very well at present pop and pour. Green apple, lemon, lemon pith, dried flowers, a touch of salinity, almond paste, and just a hint of oak that blends it all together with very elegant acidity. It seems quite linear, and I would say less complex in general if compared to Vaillons (in general). Strangely while this wine is quite fabulous by itself, it was a bit too specific in some aspects and lacked ability to pair with a range of food. Perhaps this explains why, in addition to reduced quantities in the market even upon release, that you very rarely see Secher / Sechet Chablis on wine lists (at least in my area). Some might say hold it longer, but I can’t expect this to be any better right now.
