Saturday, January 27, 2024 - 1hr slow-ox. One to admire before the first sip. Fairly complex nose that lots of evolution in the glass. Nice viscosity in the mouth. Classic style that has no need to go out of fashion. Juicy, fresh, underlaying minerality, acidity that just brings life without bringing attention to itself. The only issue is a slight overpresence of the oak. Surprising, considering that Carillon uses wood only for a year with mere 20% new oak. The same issue as the village 2017.
