Tuesday, October 16, 2012 - Popped and aerated in bottle for 4-5 hours. Medium-plus garnet/purple, hazy. Complex, multi-faceted nose just jumps out at you and shows extremely intriguing aromas of spiced Chirstmas ham, kirsch, provencal herbs, barbecue spices, milk chocolate, teriyaki sauce, and dried maki wrapper...lots of umami. Medium-plus body. Interestingly, the fruit on the palate veers in the more red-fruited direction, with fresh cherry and raspberry notes accented by cedar shavings, spiced oak, crushed stones and an herbaceous note. Moderate acidity and just a touch of heat. The finish lingers on well past taking a sip. Although the tannins are a touch astringent, this seems to be drinking in a good place but will no doubt go for quite some time as it possesses all the structure necessary for aging.
