Monday, June 15, 2020 - Wines Done Blind: Disgorged October 2018, 2 g/l dosage and 100% Chardonnay. Tasted over two days (and I actually have enough for a third day, to be finished tonight). Aromas of lees and lemon verbena with fresh cut apple. Lemony, clean and balanced and when warmer gets creamier, reminding me of a well-built, pure still Chardonnay. We poured this next to the Ulysse Collin Pierrieres, and I found the Leroy to be juicier and more racy than that wine, too...... of note, I continue to taste this wine even on day 3 as the bottle stopper has done a nice job of keeping the bubbles fresh and the wine's fruit and presence continues to really shine. There is a rainwater quality that exists in the finish, alongside the beautiful lemon fruit that this wine is built around. It's just a really lovely bottle of Chardonnay.

    6/15/2020 9:54:00 AM - So would you say this is better than Les Pierrières? Curious on how you keep the leftover bubbles to second and even third day. I used the cheap Champagne stopper and found it lost much bubbles the second day.

    6/15/2020 9:59:00 AM - To clarify, the Collin was more well-received at the table, including by me. Of note, there is about a $70 price difference between Remi's wine and that of Collin. I did think the Collin was better, but I have to distinguish that we're in different appellation and also price. For Remi to make a wine that good for that price is also pretty amazing. As for bubbles, my stoppers work really well. Both of these wines held the CO2 very well. I have more Remi Leroy to finish tonight so we'll see if the bubbles held for a third day but I also think Remi's wine drinks terrific when still so even if the bubbles are gone, I will be happy.

    6/15/2020 10:09:00 AM - Thx again for reply. I'm lucky to get the Pierrières and Maillons at less than $100 Cdn when they were on sale. I used the cheap Champagne stopper by Crate and Barrel. What is yours?
