Friday, October 23, 2020 - Very much in development and still trying to find balance. Right now this comes across as very terroir driven with blackened, charred earth; savory notes; and some noticeable gaminess. Red florals with red fruits, which are tart and somewhat undefined are still trying to integrate. Highly structured with high acidity and tannins which need additional time to come together. Long finish. Requires both decanting and food...tonight, it was a Pepperoni pizza which seemed to lessen some of the still rough edges...huge upside potential with a couple more years in the bottle. Recommend food and decant near term.
