Sunday, February 14, 2021 - This was a little better than my last taste about 20 months ago. It has a bit more depth and layers of flavor. Lime and lemon, guava, lychee, stone fruit and some new rubber are among the scents and flavors. Bright and slightly saline. Mineral laden finish. Weightier texture as well. Finish also has a creaminess not present on the nose or the attack. This was an excellent accompaniment to my lobster and fennel risotto.
