Wednesday, February 1, 2023 - Produced by Bergstrom. Seemed big & heavy at first, but on day 3 this really came together. Boysenberry, violets, freshly cracked black pepper, a little cured meat, coffee/cocoa and stoniness. I would give this plenty of time in the cellar or a long decant.
