Saturday, July 3, 2021 - Disgorged 09/09/18. Flat and intensely oxidative at first, which opened up a lot with air. Medium-ripe yellow fruit, chalky minerality, spicy even, intense (but not coarse) bubbles that pair perfectly with the hotpot. 91-92
