Wednesday, June 14, 2023 - Drank over 2 days and this became many different wines and experiences. Day 1 on opening this had a nose of toast and citrus that could have been confused for champagne, on the palate Lemon and marmalade and some orchard fruit, very effervescent mousse. After a few hours this lost some of the initial sweetness and the lemon and acid were most prominent—I enjoyed it but I can see how this stage would be very polarizing.
Day 2 still some bubbles but it definitely has a more vinous quality. Reminds me of a good Oregon Chardonnay, still lemon and acid but more balance and some matchstick type reduction notes (which must not be reduction to appear on day 2?)
Very strange, very fun bottle
