Sunday, May 17, 2015 - Decanted for an hour before a wild venison chop dinner. That was about right. The wine opened by that point, and stayed at that plateau for the next 3 hours, turning slightly sour by the end. Worked well with the wild venison, which was a superb cut. Leather and dark fruits dominant in nose and on the palate.
