Saturday, May 8, 2021 - A bit green on the nose with not much fruit on the nose at first. Bell peppers and tomato leaf. On the palate again not much fruit, but instead dominated by the savoury elements. A bit harsh and green on entry. Then some herbal and floral notes of sage and roses. After 3h some red fruits started to emerge on the palate, took another hour for those to start to emerge on the nose. Raspberry, cherries, and underbrush. Overall, it seems a bit disjointed at the moment and needs time. I’d give this at least 3 years, preferably closer to 5 before checking in on it again.
