Tuesday, December 25, 2007 - On opening, a dark deep ruby color; no browning on the edges. Nose was slight phenolic, with some cedar wood and pencil notes and a little red fruit. Taste was somewhat shutdown, some layers of cherry, cedar, and tannins were found. Decanted for one hour to allow the wine to open.

After one hour: tannins had faded to reveal a smooth and well balanced wine. In the wine cherry, cedar, and a slight amount of phenolic flavors were found. Nice finish, though a little heat was detected. Overall a very nice and elegant wine. Definitely a wine to be served with foods (beef Wellington or other flavorful, but not spicy beef dish).
