Thursday, August 7, 2008 - Yellow in glass, aromatically starting to pick up some of the baked bread character typical of Bollinger, but still retaining fresh green apple and yellow flower notes. On the palate, the wine showed very well with nice richness up front carrying the baked bread, apple, and hints of baking spice through to the moderate finish. As a still wine, the green apple notes start to approach yellow plum. Is it worth retaining a bottle to see what happens with a few years on the cork?
